Lecithin is a fatty substance called a phospholipid that consists mostly of choline, inositol, phosphate, glycerol and fatty acids. Phospholipids are the building blocks of cell membranes and keep membranes from hardening. Lecithin also plays an important role in breaking down cholesterol and other fats in body fluids reducing the risk of atherosclerosis and heart disease.
Choline found in lecithin helps produce acetylcholine essential to the nervous system and to memory functions. For this reason, lecithin is a valuable nutrient for the prevention as well as in patients with Alzheimer's disease.
